Making your own pancakes at home while in your PJs is a Sunday must for me, and when they are perfectly soft and fluffy you might just want to eat more of them for lunch as well!
When I think of Sunday breakfasts, I think of a family: Sitting together with my favorite people, chatting over soft music, table flowers, a warm, tall stack of pancakes and some fresh berries.
Forget the greasy potatoes, sausage or bowl of sugary cereal — soft protein-rich, easy to make pancakes and fruit will do!

The main ingredient in these delicious pancakes is cottage cheese!
I have been making pancakes since my only daughter started asking for it everyday, and it has been at least 6 years since then, if not more! There are many recipes I have tried and loved, but this by far has been my favorite to make and enjoy, because its so nutrient-dense, has easy ingredients and produces pancakes uber soft and fluffy. Oh and did I mention they are soft and fluffy? 🙂
